Avocado Puree

300g         avocado green

100g         sweetened condensed milk

5g              salt

2g              malic acid

  1. Place avocado, sweetened condensed milk, salt, and malic acid in the cup of the blender. Blend on high, using a ladle to push the puree into the blade.
  2. When the puree is smooth, pass through a chinoise, and transfer to a piping bag fit the the star tip.
  3. Store in the low boy for service.
