Charred Oranges


  1. Supreme orange segments. Line them up on a half sheet pan fit with a rack. Place in the dehydrator for 15 minutes.
  2. After 15 minutes, remove the oranges and use a torch to blacken the oranges just enough that they look like butterfly wings.
  3. Transfer the charred oranges to a quarter sheet pan lined with a c-fold and store in the low boy on the line for service.
