3 parts pastry cream

2 parts italian meringue

  1. Place the pastry cream in a medium sized work bowl and whisk until smooth and even. Add any flavorings you’d like here, like vanilla extract, orange flower water, or espresso.
  2. Add the italian meringue and fold together gently, just until the whites dissappear.
  3. Use immediately.
