300g pastry cream

25g grand mariner

150g cream whipped to soft peaks

  1. place the pastry cream and grand mariner in a medium sized work bowl and whisk together until very smooth.
  2. Add the whipped cream and fold in gently with a rubber spatula until evenly incorporated.
  3. Use immediately.
