Whipped Goat Cheese

400g        goat cheese soft and at room temperature

100g        sucrose

100g        cream

2g            salt

.5g           malic acid

400g        cream

  1. Place goat cheese, sucrose, 100g cream, salt, and malic acid in the bowl of a kitchen aid. Paddle for 2 minutes on speed 8 until the goat cheese is smooth.
  2. Whip the 400g cream to soft peaks. Fold into the goat cheese until even.

Pack the whipped goat cheese in 3 x 325g pints
