400g goat cheese soft and at room temperature
100g sucrose
100g cream
2g salt
.5g malic acid
400g cream
- Place goat cheese, sucrose, 100g cream, salt, and malic acid in the bowl of a kitchen aid. Paddle for 2 minutes on speed 8 until the goat cheese is smooth.
- Whip the 400g cream to soft peaks. Fold into the goat cheese until even.
Pack the whipped goat cheese in 3 x 325g pints
