500g macadamia nuts toasted for 5 turn 5 at 325
10g salt
200g sucrose
350g evaporated milk
- Place macadamia nuts and salt in the cup of a blender and blend on high until they liquify.
- When the nuts liquify, add the sucrose and evaporated milk, and salt, and blend until smooth.
- Transfer to 200g piping bags and store in the low boy for service.
