Licorice Cream

 

300g       cream

100g       creme fraiche

100g       steens cane syrup

10drops    licorice extract

10drops    fennel extract

 

  1. Place cream, creme fraiche, steens, licorice extract, and fennel extract in a metal bowl. Whip until the cream reaches thick tight peaks. Transfer to a deli for storage in the low boy during service.
