Chocolate Pate De Choux

 

15g           cocoa powder

140g         flour ap

5g              salt

180g         water

120g         milk

120g         butter

30g          brown sugar

200g         eggs

 

  1. Place cocoa powder, flour, and salt in bowl and stir to combine. Set aside.
  2. Place water, milk, butter, and brown sugar in a wide all clad pot with the long handle. Place over medium high heat and cook until the liquid comes to a boil.
  3. Add the reserved flour mixture and stir with a spatula until it form an even dough. Continue to cook over medium high heat for 2 minutes, stirring continuously.
  4. After 2 minutes, transfer the dough to the bowl of a kitchen aid mixer fit with the paddle. Paddle on medium speed for 1 minute, then add the eggs, one at a time, until they are all incorporated.
