Bourbon rose syrup

  1. Peel the pears, remove the stem and core that runs the lenghth of the pear, along with the seeds and their hard hulled region. Place peeled pears cut side down in a 2 inch hotel pan, covering the bottom. Cover the pears with cheesecloth and set aside.
  2. Place the bourbon rose syrup in a large pot and bring to a boil. When the syrup boils, pour enough syrup over the pears to cover entirely.
  3. Cover the hotel pan with vented foil and transfer to a 400 degree oven for 15 minutes. After 15 minutes, turn the temperature down to 300 and continue cooking until the pears are translucent and tender, anywhere from 30 minutes to 1:30 depending on the size and ripeness of the pears.
